Penn State University senior Lindsey Schnitt says she'll miss the school's food-service staff when she graduates, because of the extra effort they made to accommodate her gluten-free diet. Schnitt, diagnosed with celiac disease in 2008, says the staff not only took her menu suggestions and encouraged her to order different types of gluten-free foods, they also let her watch as kitchen staff prepared meals. "They have forever changed my life, and I credit my success in college to them," she said.
