When you step into some kitchens in New York City, you may feel you've entered a concert hall as loud music blares from speakers. Younger chefs are blasting their favorite tunes, from Metallica to Notorious B.I.G., boosting the energy of the staff and getting them in the right frame of mind to keep up with a demanding weekend crowd. "It clears my mind and gives me a blank canvas to work from,” says Jesse Schenker, chef at Recette. “That helps me create. When it gets too hectic and overwhelming, I just turn on a tune. And I focus.”
