Kimberly Smyth, director of food service in a Massachusetts school district, said students have embraced healthier meals, including whole-grain French toast and baked chicken nuggets. Now, she is planning to work with a nutritionist to develop "sports packs" -- healthy snacks that student-athletes can pick up before practice or a game. Plans also are under way to introduce "Adventure Thursday" in elementary and middle schools, when students will get to suggest menu items.
