A retired physician in Mississippi is working to raise money through his foundation to provide combi-ovens for the state's schools. The ovens, which cost about $18,000 each, are a cross between a steamer and an oven, and they help reduce fat and calories in foods, such a french fries. School nutrition professionals say, in many cases, students prefer food cooked in the new ovens, which have been distributed to more than 100 schools so far with funding from the foundation and the federal government.
