Philadelphia-based Delavau Food Partners has developed technology that can infuse the calcium equivalent of a glass of milk in the chocolate coating of a candy bar. The process has little impact on taste or texture, and it could help fortify diets lacking in calcium, says Delavau executive Jeff Billig.
Barry Callebaut is purchasing Sweden-based ASM Foods from Carletti A/S of Denmark, including a production facility in Mjolby. The acquisition will give the chocolate company a stronger presence in Scandinavia, with added volume of more than 27,000 tons of chocolate, compound and fillings.
Researchers say biodegradable packaging for food can be made with the pulp of sugar beets combined with polylactic acid, which is extruded or injection-molded. The resulting thermoplastic could be used for plastic containers, films and bags.
The Jelly Bean Factory, launched in Ireland in 1998 by Peter Cullen and his son Richard, makes 12 million jelly beans a day and expects growth to double in the next two years.
