Unilever and Eurofins are among the industry leaders participating in a study backed by the European Commission, which will lead to new standards and processes for food allergen management. "This is a massive research project which will have far-reaching consequences for consumers and food producers," said Clare Mills, the University of Manchester professor who is leading the effort.

The Ultrachoc project, funded by the European Union, hopes to improve consistency in chocolate production by studying the use of ultrasound to monitor and control cocoa butter crystallization during tempering. Nestle and Valor are among the companies participating in the project.
