Hundreds of sous chefs attended the Pebble Beach Food & Wine festival this past weekend where they worked managing line cooks, prepping food and wrapping up loose ends before their executive chefs hit the public stage.
"The sous chef makes sure everything I need, exactly as I've requested, is available to me. If there's a problem, he or she has already addressed the situation before I get there," said Todd Fisher, chef de cuisine at Sticks in Pebble Beach, Calif. "At Pebble Beach Food & Wine, the sous chef will be the person in the trenches, the one who's working and sweating, the person in charge, so the celebrity chef can walk out there and greet the audience completely fresh, wearing a perfectly clean white coat."
