The Mesamerica Festival kicked off in Mexico City on Monday and chefs demonstrated their top dishes and discussed how the culinary arts can help improve Mexico's economic and political landscape. Carlo Petrini, founder and president of Slow Food, explained how using and promoting Mexican products can boost the country's agriculture industry. "Gastronomy isn't just techniques or recipes. It's agriculture, history and politics," he said.
