Gluten-free diets that are nutritionally balanced should not pose health problems to those who do not have a medical need for them, but they can be expensive and require more planning, dietitians say. Ohio State University registered dietitian Julie Kennel said a gluten-free diet must contain a variety of foods to ensure adequate intake of fiber, folic acid and iron, while maintaining a proper carbohydrate balance.
