As consumers continue to explore new flavors, the popularity of previously little-known herbs is taking off. Herb seed and plant sales have gone up at nurseries across the country as "do it yourself" food preparation continues to gain traction, and chefs and food manufacturers are also taking note and offering more unusual flavors in their foods and beverages. "There's a wave of interest in new herbs, dark greens and ethnic spices," said Ahmed Rahim, co-founder of Numi Organic Tea, a beverage manufacturer that incorporates unusual herbs.
