Shimon Bokovza and his two partners opened the first Sushisamba restaurant in New York City in 1999, after a trip to Brazil eight years earlier sparked the idea for an eatery that melds the cuisines of Japan, Brazil and Peru. The eatery has since grown to seven locations, including the latest in Coral Gables, Fla.; in this interview, Bokovza talks about the chain's growth and plans for future expansion.
