You may not be able to exactly replicate the charred flavor charcoal grilling imparts with a gas grill, but food editor Chris Morocco has a few tricks up his sleeve to give foods a smoky flavor without waiting for charcoal to heat up. Putting a smoker box with wood chips in the grill adds great flavor, Morocco writes, or get a nice sear by placing tinfoil on the grates to build the heat. Remember to keep the cover on as much as possible to lock in the temperature.
