Confectioners are adding texture -- and value -- with almonds, using larger inclusions and creating products with several different textures and tastes. “Numerous market categories continue to use almonds in new premium product formulations, from breakfast cereals and bars to candy and ice cream, and product launch activity for this position is expected to grow,” said a report from the California Almond Board.
