Funding from the dairy industry and the federal government will be used to remodel and expand the Center for Dairy Research at the University of Wisconsin-Madison. The center researches dairy products and offers instructional courses to the dairy industry. “We’ve been helping companies for a number of years with Greek yogurt, and actually, we do all of our culture products amidst cheese production and other dairy ingredient research," said John Lucey, CDR director and professor of food science at UW-Madison.
