Participants who underwent a simulated night shift of work had 16% higher peak glucose levels compared with those who did a simulated daytime shift, a small study indicated. Researchers also found the postprandial insulin levels of night shift workers who ate at 8 p.m. were 40% to 50% higher between 80 minutes and 90 minutes following a meal than those of daytime workers who ate at 8 a.m. The results appear in a supplement of the journal SLEEP.
