Several top New York City chefs are ditching the city's demanding dining scene for the slower pace in Vermont, including Chloe and Wesley Genovart, who opened up their own eatery showcasing high-end Spanish cuisine. While living in a rural town gives them more time as a family, it has also been a challenge to satisfy the dramatically different tastes of locals. "Up here, people think cod is cheap, not special at all. Even though it is special and as local as possible," said Chloe Genovart, who previously ran the dining room at New York's Per Se.
