Top chefs are trying their hand at tacos and offering customers gourmet creations wrapped up in tortillas such as foie gras with hazel­nut-and-red chili jam or fresh lobster with corn. While a beer may be the perfect pairing for a casual Mexican meal, upscale tacos can be further elevated when matched with wine. "Mexican wines -- especially those from Northern Baja -- are terrific for tacos because they’re easy drinking, and tend to have softer tannins and are more fruit forward," said Jill Gubesch, wine director at Rick Bayless' restaurants in Chicago.
