The demand for heart-healthy bison meat is on the rise thanks to gourmet burger joints such as Ted's Montana Grill, but CEO George McKerrow warns cooks to take special care before throwing bison on the grill, and remember not to treat it as they would beef. "You have to cook it less time. Even burgers are best eaten at no more than medium done. If you're a well-done meat eater, bison will be good, but you're not going to get the full flavor and taste," he said.
