Inmates at the Salt Lake County jail are learning organic farming skills in an Excellence in Gardening program that's also designed to instill a work ethic. The inmates take 10 hours of classes and tend a 1.5-acre organic garden, learning all the tasks needed to grow the produce, including pest management, monitoring the irrigation and harvesting. The produce grown and harvested from the jail's garden is sold at a weekly farmers market.
