East Coast Wings & Grill has developed two additional restaurant layouts -- a university model and a quickservice model -- to create new opportunities for expansion and make the initial investment more flexible for franchisees. The company has 104 units in development, including a seven-year deal with a franchisee in Knoxville, Tenn. "The main goal of having different store designs is to have the most profitable restaurant possible. We want to fit the right franchisee with the right type of restaurant," said Daniel Collins, the company's senior vice president of brand management.
