About 80% of consumers say restaurants should feature more fresh produce, and 82% of restaurant operators say they'll heed the call and feature fruits and veggies more prominently in coming years, according to Maeve Webster, senior director at Datassentials. Local produce, healthy dining and greater diversity of dishes are on the menu at the Produce Marketing Association's Foodservice Conference and Expo this weekend.
