On hot summer days Russians enjoy a cold glass of kvas, a sour, naturally fermented beverage made with brown bread, yeast and flavors such as mint or honey. The drink is now popping up in the U.S. where breweries and independent food and beverage companies try their hand at the historical beverage.
"We are Brooklyn young 20-somethings making a naturally fermented drink. But we're actually reaching into something that actually has a lot of meaning in the world, and reintroducing it," said Jeffrey Yoskowitz, co-founder of Brooklyn-based Gefilteria.
