An FDA requirement for food labeled "gluten-free" to contain only trace amounts of gluten is expected to make it easier for people with celiac disease to wade through a growing sea of gluten-free products. The previous lack of a standard meant those with the allergy had to read labels carefully to try to determine whether food was safe. “It allows us to breathe a little easier,” said Gabrielle Simon, who began a support group for families of children with celiac disease in Nyack, N.Y.
