Half of the people who flock to food trucks would otherwise spend their lunch money at quickservice restaurants, while 20% would have skipped the meal altogether, according to a survey from NPD Group. The research shows that, while food trucks with their varied menus may take some sales away from quickservice eateries, they also expand the universe of meals eaten away from home. "QSR operators may wish to take note of the benefits food trucks offer, such as different and fresh food, especially as a means to build their snack business and/or protect lunch traffic," said NPD's Bonnie Riggs.
