New York's Hillrock Estate Distillery plans to release a small-batch Double Cask Rye Whiskey in mid-September that aims to capture the essence of the historic Hudson Valley. "Inspired by fine estate vineyards, we control every aspect of production from growing our own grain organically, to traditionally floor malting, pot distilling, aging and bottling all by hand on the estate," said Hillrock owner Jeffrey Baker.
