School nutrition professionals in an Illinois district have worked in collaboration with children's health organization genHkids to launch a new menu aligned with federal meal standards. The menu includes more fresh produce and made-from-scratch dishes, including hummus, meat loaf, macaroni and cheese with homemade cheese sauce, breakfast burritos and chicken and noodles. School nutrition professionals attended training sessions over the summer to learn to prepare the dishes.
