Japan-based machinery supplier Masdac International says that Japanese cake producers are 15 years ahead of their rivals in the U.S. and Europe when it comes to innovation. The cultural role of cakes in Japan as a high-value gift with expectations of premium packaging and quality have required that Japanese producers make greater strides, according to Matthijs Sillevis Smitt, Masdac's sales manager for North and South America.
