Smitten, a San Francisco ice cream shop founded in 2009, offers customers its ice cream made on-demand using a new technology that employs liquid nitrogen to freeze ice cream ingredients in one minute. The machine, called the Brrr, allows Smitten to use all-natural ingredients without the stabilizers required in traditionally made ice cream, and produces an ice cream with a creamy, mousse-like texture.
