Tomatoes may be in peak season now, but come winter there are some tricks chefs can use to make out-of-season tomatoes taste more like the fruits of summer. Roasting with olive oil, salt and pepper concentrates the flavors of tomatoes, as does caramelizing them under a broiler. A little pineapple juice can help winter tomatoes mimic the bright acidity of summer specimens.
