White House chef Sam Kass says the U.S. is at a nutrition "tipping point," with higher fruit and vegetable consumption and a greater public awareness of healthy eating. Kass said he expects a smoother year for schools implementing federal nutrition guidelines, and noted that school chefs often serve hundreds of students without a lot of resources and that "figuring out how to do this in a way that the food tastes good ... is a real challenge."
