Production of Hispanic cheeses in Wisconsin was up to 65.6 million pounds in 2012, compared with 9 million pounds 20 years ago, according to the Wisconsin Milk Marketing Board. The market for Hispanic cheeses in the state is growing as mainstream stores stock a variety of about 18 types of Hispanic cheeses including queso de freir, panela queso blanco and queso quesadilla, and some factories in the area move exclusively to producing Hispanic cheeses.
