The "Get Your Kitchen in Shape" program through the Partnership for a Healthier Louisiana and McNeese State University teaches people how to cook healthy meals using ethnic or favorite foods, says registered dietitian Eljeana Quebedeaux, director of the school's Didactic Program of Dietetics. Quebedeaux says the class teaches preparation of quick, family-friendly meals that limit calories, fat and sodium.
