Locally grown and raised food has become "one of the fastest-growing segments of agriculture," Agriculture Secretary Tom Vilsack says, raising the question of how retailers and restaurants define "local." "As long as [retailers] are transparent about what 'local' means, I think the consumer can go through and say, 'OK, either I accept it or I don't accept that definition,' " said Craig Chase, who leads the Marketing & Food Systems Initiative at the Iowa State University Leopold Center for Sustainable Agriculture.
