Federal standards for school meals have made it more challenging to encourage students to choose healthier options in the cafeteria, some officials say. However, data suggest that when students are presented with healthier options, they will eat them in greater numbers. "To succeed in improving children's diets, meals must not only be healthful but also appealing so that healthy foods are eaten, not wasted," the U.S. Agriculture Department has said.
