Food deserts are not just an urban problem, says David Procter of Kansas State University, who notes that the health of rural populations is threatened by a decreasing number of grocery stores. Procter, director of the Center for Engagement and Community Development at Kansas State, began the Rural Grocery Initiative, which helps small grocers survive by offering business-consulting services and working to get people to shop locally and invest in stores.
