More schools in Maryland -- and beyond -- are joining the farm-to-table movement and purchasing more locally sourced food for cafeteria menus. At a time when heat-and-serve meals are common in some schools, Jeffrey Proulx, foodservice director for the Washington County school district in Maryland, is taking a different approach by partnering with area farmers to provide fresh Asian pears, cherry tomatoes and pork from a nearby farm.
