Tofu brand Nasoya has hopes to grow sales of the soy bean product by promoting it to mainstream consumers, not just vegetarians. The brand sees Chipotle's use of shredded tofu as an alternative to chicken, pork or beef as an example of the protein's untapped potential. "There is so much upside for tofu. While it was traditionally seen as a vegan protein, in the last few years things have changed with initiatives like Meatless Monday," said Brad Lahrman, brand manager for Vitasoy, parent company of Nasoya.
