Some restaurants are changing their menus to fit the needs of customers who follow the Paleo Diet, a regimen that is high on protein and produce but that eliminates processed foods, starches, grains and dairy. Mark Timms, executive chef at the Fairmont Hotel in Washington, D.C., added salads, steaks and omelets to his eatery's offerings after losing weight using the diet.
