Chicago-based fast-casual chain Protein Bar has grown to 12 units since launching four years ago, and the health-focused concept recently won $22 million in new private-equity funding. The chain, which plans to grow to between 300 and 1,000 eateries nationwide in the coming years, offers a menu of premium salads, quinoa burritos and protein smoothies aimed at millennials willing to pay more for healthier fare.
