Restaurant owners are responding to customer demand for better coffee, swapping out pod coffee brewers in favor of expensive roasters, but the high price of equipment and professional baristas is giving some restaurant owners pause.
"I think the big question that nobody totally knows the answer to yet is whether or not really high-end espresso service in restaurants is worth it or works or is appropriate," said Jordan Michelman, co-founder of coffee blog Sprudge.
