Denver-based Mad Greens isn't strictly a vegetarian eatery but the cuisine lends itself to meatless meals, which appeal to vegetarians, vegans and a growing number of patrons who are leaving meat off the plate at more meals, says co-founder and CEO Marley Hodgson. "It's the same for me, sometimes I have a meat-free salad just because I don’t feel like having meat that day. I think it has opened people's eyes more to the possibilities and the reasons for being vegetarian or vegan are more understood and appreciated," he said.
