Young Turkish chefs are following in the footsteps of Mehmet Gurs, a Swedish chef who has made it his mission to revolutionize Turkish cuisine by using only ingredients from the region and combining traditional tastes with the latest in techniques. Gurs plans to expand the country's culinary power by opening a brewery, coffee roaster, bakery, kitchen lab and public library full of Turkish ingredients in the Istanbul area by the end of the year.
