Philadelphia restaurateurs Jeff Landau and Kate Jacoby have developed a reputation for innovative vegan food that has only grown since 2011, when the husband-and-wife team launched Vedge, an upscale vegan restaurant that takes the focus off protein and makes vegetables the star of the plate. "Vegetables were becoming very hot and the world was not falling in love with seitan. We had to evolve -- we were more scared of not changing. That's how Vedge was born," Landau said.
