Visitors to the National Museum of the American Indian in Washington, D.C., can dine in the Mitsitam Cafe, where executive chef Richard Hetzler includes seasonal foods and looks for historical and regional foods to include in the menu, such as succotash. "We become a living exhibit within the museum because they get to taste, feel, smell and really immerse themselves in that native culture," Hetzler said.
