Egg sales, until recently, were flat at best, but sales were up 2.5% through mid-May this year with the biggest jump in specialty categories such as organic and cage-free, which increased 13.5%. To drive sales, egg producers, including Eggland's Best, are tweaking hen feed to increase fatty acids, vitamins or calcium. A high-calcium egg with enough calcium to qualify for a health claim is the ultimate goal, according to Eggland executives.
