In an Almond Board of California survey, 65% of 5,400 consumers in 10 global markets said they preferred chocolate with nuts, saying they like the crunch of nuts, along with their many associated health benefits. However, adding nuts can affect shelf life. "Nuts can contain high levels of polyunsaturated fatty acids and therefore can become very unstable resulting in shorter shelf life," said Gary Augustine, executive director of Kalsec Inc.
