British Airlines is adding umami, the fifth taste the tongue can detect, to a wide variety of foods after experimenting with dishes prepared by chef Heston Blumenthal that included the trendy flavor. The company is trying to boost its culinary reputation in the first- and business-class sections by serving dishes such as steak with an umami-loaded crust or pork cheeks with lime and lemongrass sauce.
