While acknowledging there is a fad component to the popularity of gluten-free dieting, Dr. Alessio Fasano noted in a talk this week that our understanding of how gluten interacts with the body is evolving rapidly, and that intolerance of gluten is a real concern. Celiac disease, wheat allergy and gluten intolerance all appear to involve a mixture of genetic and environmental risk factors, Fasano said during a lecture at the Florida Institute for Human and Machine Cognition. Fasano is founder of the Center for Celiac Research.
