Craft cocktails are showing up in more big-city restaurants by the keg, a trend that is likely to continue, writes Evan Fleischer. The Fairsted Kitchen in Brookline, Mass., serves a Bijou cocktail of gin, vermouth, génépy and orange bitters in draft form, while letting bartenders mix up the classics, such as Manhattans, the old-fashioned way.
