The number of artisanal American cheese producers has risen to 825 licensed producers in 2012, up from 410 in 2006, and cheesemakers are branching out beyond the traditional cheese-making states into places such as Maine and North Carolina, according to Jeffrey Roberts' book "The Atlas of American Artisan Cheese." Grocers such as Whole Foods Market, Kroger and Wegmans are promoting artisanal American cheeses and 82 American cheeses were awarded prizes at the U.K.'s Guild of Fine Food's World Cheese Awards.
